Pumpkin Soup Bowl

Pumpkins are most often hollowed out to carve out jack-o-lanterns, but a hollow pumpkin also makes a great bowl for pouring your soup into. The heat and moisture of the soup softens the pumpkin and allows you to scoop out the filling to make a great pumpkin soup combo. It is very filling, very satisfying, and very warming on an autumn day.

Preparation Time: 10 minutes
Cooking Time: 52 minutes
Makes: 1 serving

Ingredients
1 small pumpkin
200ml chunky soup of choice

I used a spicy lentil soup, but you can use whatever soup you like. Chunky soups work best and I think a slightly spicy soup gives the best combination. Here are some suggested soup recipes from RecipeYum:

Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/ 375 ༠F/ 5 Gas.

Chop the top off the pumpkin and scoop out the seeds and pith inside to leave a hollow framework.

Bake in the oven for 50 minutes.

Pour in the soup and heat in the microwave for another two minutes.
