Purple and Orange Potato Hash

Superfood powerhouse, complex carbs and bags of energy, whats not to love about beetroot?! Add it your normal breakfast potato hash to mix it up!

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings



Ingredients
Coconut oil
1 large beetroot
1 red onion
A handful of greenbeans
1 duck egg
1 small sweet potato
1/2 of an avocado
Garlic salt



Method
Peel and chop up the sweet potato, beetroot and red onion.



Add to a saucepan of boiling water.



After 15 minutes of boiling fry the red onion add the beetroot and sweet potato, add garlic salt.



Add the greenbeans to the same water used to boil the beetroot and sweet potato boil for 2 minutes.



Take the greenbeans out, add one duck egg and poach.



Scoop out one half of the avocado and plate up.



Although this looks like one very large serving, I would recommend halving the beetroot hash and saving for another day as its quite a heavy breakfast! Enjoy!
