Coconut oil is the wonder ingredient in this salad; it makes raw carrots sing, it provides electrolytes, healthy fats needed to absorb the nutrients from vegetables during digestion. This salad is great with a meat dish too
Preparation Time: 10 minutes
Makes: 3 servings
Ingredients 5 purple carrots
Handful mixed tomatoes
1 head of spinach
1 romaine lettuce
3 tblsp olive oil
3 tblsp red wine vinegar
Half a lemon
Add all of the dressing minus the coconut oil to a large bowl.
Start peeling half of the carrots into the bowl.
Once half of the carrots are in the bowl pour over some of the warmed coconut oil.
Add the lettuce and tomatoes.
Add the spinach and peel the remaining three carrots on top of the leaves.
