A light, seasonal salad can 'make' any dish. Lift it, if you will, and this purple carrot medley does us that.
Preparation Time: 10 minutes
Makes: 2 servings
Ingredients
5 carrots
5 radishes
Sprig of rosemary
Handful of fresh spinach
Handful of kale (optional)
3 tblsp olive oil
Half tsp black pepper
Method
Peel the carrots using a standard peeling knife/ utensil and chop the radishes as finely as possible.
Rub the olive oil into the kale leaves - this will soften them and allow them to be absorbed into the system easier.
Tear the spinach and add it along with the kale to a bowl.
Add the remaining ingredients to the bowl.
