Quesadillas

Good for a light, healthy lunch.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
2 flour tortilla
Shredded mozzarella cheese (amount to your liking)
1 green pepper, diced
4 fresh mushrooms, diced

Method
Sprinkle mozzarella, green pepper and mushrooms on half of each tortilla.

Fold over.
Coat skillet with cooking spray.
Place tortilla on skillet, medium-high heat.

Grill until brown and cheese melts.
Serve.
