Ingredients 1 large chicken breast or 2 smaller ones
¼ cup seasoned breadcrumbs
¼ cup Parmesan cheese, grated
1 small egg, lightly beaten
1 tbsp butter
About 180 - 200 g spaghetti sauce from jar
¼ - ½ cup mozzarella cheese, shredded
If you are using very large chicken breasts, slice them into about 4 thin pieces.
Put the chicken between some plastic wrap and flatten it using a meat mallet.
Mix the bread crumbs and cheese.
Dip each chicken piece into the beaten egg, and drain, and then coat all over in the breadcrumb mixture.
Melt the butter in a large pan, add the chicken and just brown it on each side.
Arrange the chicken in a lightly oiled baking dish.
Pour the spaghetti sauce over the chicken.
Sprinkle with the mozzarella cheese.
Cover this and bake it at 180°/160° if fan forced.
Bake for about 20 - 30 minutes or until heated through and chicken is no longer pink. Do not overcook or chicken becomes tough.
