I made this recipe in 30 minutes, which I think is record time for a filling, enjoyable meal for two people.
Preparation Time: 2 minutes
Cooking Time: 30 minutes
Makes: 2 servings
Ingredients
1 chicken fillet breast
2 tsp ground ginger
1 sprig of rosemary
Half tsp salt
Half tsp black pepper
1 mug of rice
Method
Wash the rice thoroughly and place in a saucepan of 2 mugs of boiling water.
Turn the rice to a simmer for 25 minutes and place a lid on top.
Place the chicken on a griddle pan with the seasoning.
Turn to a low heat, add the oil and turn every 5 minutes.
Turning the meat every five minutes allows it to brown and have that griddled 'look', but also cook through.
The meat should have a golden-brown colour all over when it is completely cooked.
Plate up, starting with the rice first.
Add the chicken, and tuck in.
