This pizza omelette is quick, tasty and in one bowl
This quick, tasty and easy pizza omelette is my favourite when I want something fuss free and on the table within 5 minutes. This delicious omelette is gluten and lactose free, low FODMAP and can be adapted for vegetarians. Serve for breakfast, brunch or lunch.
Ingredients 1 egg
1/8 cup milk (lactose free or use water)
1 slice ham chopped (exclude for a vegetarian option)
6 kalamata olives, chopped
1/8 cup chopped red capsicum
1/8 cup chopped tomato
1/8 cup chopped pineapple
1/8 cup grated cheese (lactose free if required)
Beat the egg and milk in a microwave safe bowl until combined. The bowl needs to be large enough for the omelette to rise.
Beat the eggs and milk
Add the ham, capsicum, olives, pineapple, tomato and stir to combine.
Add the cheese and stir until combined. I used cheddar but a mixture of parmesan and cheddar tastes great.
The cheese will melt and will help hold the omelette together with the egg
Microwave for 2 - 2 1/2 minutes until the egg is cooked. The total time taken to cook depends on the size and shape of the bowl and the microwave setting.
Cool, serve and enjoy.
Exclude the ham for a tasty vegetarian option.
Alternative meats include salami, chorizo and chicken.
