Ingredients 1 3/4 cups SR flour
1/4 cup vegetable oil
2/3 cup boiling water
100 g bacon, diced
100 g pumpkin, sliced thinly and diced
1/2 capsicum, diced
1/2 onion, diced
1/2 cup pizza sauce
75 - 100 g grated cheese
Preheat oven to 200C and line 2 baking trays with baking paper.
Combine the flour, oil and water and mix until combined. Knead for a minute or two until the dough is pliable.
Cut the dough in half and roll each half into your desired pizza thickness and shape. Place each pizza base on to a baking tray. Using your fingertips, dimple the dough.
Place the pizza bases in the oven for 5 minutes. Then remove to apply toppings.
Spread the pizza sauce over the top of the bases, leaving a 1cm border. Top with the onion, capsicum, pumpkin, bacon and cheese.
Bake for 15 minutes before cutting into wedges and serving.
