A light flaky pastry with so many different uses. This quick rough puff pastry will give you plenty of amazing flake without the hours of waiting usually associated with homemade puff pastry.
Preparation Time: 10 minutes
Cooling Time: 40 minutes
Ingredients
250 grams plain flour
1 teaspoon of salt
250 grams of butter
100 mls of cold water
Method
Mix flour and salt into a large mixing bowl.
Grate the butter directly into bowl. If your house is hot and the butter starts to melt, you may need to refrigerate for a few minutes before continuing.
Gently mix the flour and butter with your fingertips.
Create a well in the mix and add water.
Mix until you have a rough dough. Cover with cling film and leave to rest in the refrigerator for 20 minutes.
Turn on to floured bench and gently knead. Form into a rectangle.
Roll the dough in ONE direction only, until the dough is around 20 x 50 cm. Try to keep edges straight.
Fold the top third of the dough to the centre and then the bottom third up and over that.
Quarter turn the dough and roll out again to three times the size. Fold again as per previous step.
Cover with cling film and allow to chill in refrigerator for at least 20 minutes.
