Pushed to the edge with only a packet of corn chips and some old capsicum to satisfy, I think I've come up with a winner of a Salsa with limited ingredients.
Preparation Time: 5 mins
Cooking Time: 15 mins
Makes: 8 servings
Ingredients 2 Tbsp olive oil
1/2 onion, chopped
3 cloves minced garlic
425g x tin of chopped tomatoes
1 half green capsicum chopped
1/2 tsp ground cinnamon
1 heaped tsp ground cumin
1 tsp coriander seed
1 tsp salt
1 Tbsp sugar
1/2 tsp dried chilli flakes (optional)
1 stalk fresh oregano or 1 heaped tsp dried
Place medium saucepan on a medium heat and add olive oil. Add onion and saute till softened (about one minute).
Add garlic and saute for a further minute.
Add cinnamon, cumin & coriander seed. Saute for about two minutes making sure the onion and garlic are coated with the spice and all the flavours are blended evenly.
Add chopped capsicum and canned tomatoes, along with sugar, chilli (if using) and salt (If using dried oregano, add with this step). Stir and make sure all ingredients are combined well. Lower heat and leave to gently simmer for approx 10 mins or until sauce thickens.
Add fresh oregano and simmer for 2 mins more.
Remove from heat. Eat hot or cold, with Nachos, burritos or serve at a party with corn chips. Would even make an awesome gift for friends presented in a great jar. Just yummo.
