Quinoa Bake

Although this recipe takes a bit of time, it's fairly simple to make and tastes delicious.



Quinoa bake


This bake includes feta and pumpkin, but would work well with various ingredients, such as zucchini, capsicum, goats cheese and even chicken if you're after some meat. It's great for when you have leftover quinoa and various vegetables lying about in the fridge.

Quinoa bake


Preparation Time: 5 minutes
Cooking Time: 45 minutes
Makes: 2 servings

Ingredients
2 cups quinoa, cooked
1 egg
50g low fat feta, chopped into 2cm pieces
100g pumpkin, cut into 2cm pieces and roasted
Handful of fresh oregano and rosemary

Method
Preheat oven to 180C.

Beat the egg in a small bowl. Place the quinoa in a mixing bowl and stir through the egg. Add all the other ingredients and mix.

Lightly grease a small baking dish, or cover with baking paper. Place quinoa mixture in the dish and flatten the top with a wooden spoon. Place in oven.

Remove after 45 minutes or when starting to brown at the edges. Serve immediately.

We served the bake with a side salad of green beans and chopped shallots with red wine vinegar.
