Schnitzel nights are always popular at pubs, cafes and restaurants, so why not do one at home? These schnitzels are easy to make, with the quinoa flakes adding a fantastic crispy-ness to the coating that everyone will enjoy!
Preparation Time: 10 minutes
Cooking Time: approx. 10 minutes per schnitzel (although a few can be cooked at once depending on the size of your fry pan)
Makes: 6 servings
Ingredients
6 thin chicken breast fillets
1/2 cup plain flour
2 eggs, llightly beaten
1/2 cup quinoa flakes
1/3 cup bread crumbs
Oil for frying
Method
Mix quinoa and breadcrumbs in a shallow dish.
Place flour and chicken breasts into a plastic bag. Shake to coat chicken.
Dip floured chicken in egg, coating thoroughly.
Coat chicken in quinoa-breadcrumb mix.
Using a large frying pan, add enough oil to come 5mL up the side of the pan. Fry chicken in batches over high heat for 3-5mins each side, or until crumbs are golden and the chicken is cooked through.
Place schnitzels on paper towel to drain off excess oil, then serve.
