Quinoa 'Comfort Food' Pudding

Quinoa pudding - a warm hug in a bowl

A nourishing bowl of dessert...or even a make-ahead brekky for busy mornings.

This is a nutritious alternative to white rice pudding with more vitamins, minerals, fibre, and protein. The sweetness comes mainly from fruit.

Preparation Time: 0 minutes
Cooking Time: 25 minutes
Makes: 4 to 6 servings

1.5 cups water
3/4 cup quinoa
1.5 cups milk
1/4 cup sultanas
1 large ripe banana
1 tablespoon honey (or to taste)
2 teaspoons butter
1/2 tsp vanilla
pinch cardamom
1/4 cup pistachios

Simmer water, sultanas and quinoa for about 15 minutes, or until the water has been absorbed

Cooked quinoa and sultanas

Using a blender, combine remaining ingredients except for pistachios. (You could also mash by hand if you want.)
Add to quinoa and cook for about 10 minutes. It will thicken.

Meanwhile, toast pistachios in the microwave on high for about 1 minute, checking and stirring partway through (they can burn quickly).
To serve, spoon into bowls and sprinkle pistachios on top.
