Quinoa, Haloumi and Cabbage Salad

Light, healthy, and surprisingly flavoursome, this quinoa dish is fantastic year round. The subtle saltiness of the haloumi paired with the tangy mustard sauce is an outright winner!

For people reluctant to indulge in a vegetarian meal, add a side of meat or chicken as you will find the salad complements all additions.



Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 6 servings

Ingredients
1 cup quinoa
1 tsp olive oil
180g haloumi, diced
4 cups cabbage, finely shredded (mixed cabbage looks great)
400g can red kidney beans, rinsed and drained
2 celery stalks, diced
1/4 cup coriander, chopped

Dressing
2 tbsp lemon juice
1 tsp Dijon mustard

Method
Prepare quinoa according to packet instructions. Fluff up with a fork and then set aside.

In a frying pan, heat the olive oil and cook the haloumi for 2-3 mins each side (or until golden.) Drain oil off on a paper towel.

In a large bowl, combine the haloumi, cabbage, beans, celery and coriander, mixing well. Toss through quinoa.

Whisk together lemon juice and mustard and drizzle over the quinoa salad.
