2.5 cups cooked quinoa (I use mixed for the colour, but a single variety will do)
4 tbsp chia seeds, mixed with 12 tbsp water
2 tbsp parsley, chopped
1/2 onion, finely chopped
3 cloves garlic, crushed
3/4 cup quinoa flakes
1/4 cup zucchini, grated
1/4 cup carrot, grated
coconut oil (or alternative), to fry
Throw together all ingredients (aside from the oil) in a large bowl, and mix together thoroughly.
Separate mixture into 12 small balls and flatten with hands to make a patty shape. The patty should be moist but stay together.
Heat the oil in a large non stick frying pan, and cook in batches, flipping once browned and cooked through. Remove and either serve immediately (think a vego burger, in a wrap, slice of avocado on top for a quick snack), or leave to cool and freeze for an easy weekday meal.
