1 cup raw quinoa (red, brown, or white)
2 cups water
1 onion (red or white)
2 apples (red or green)
6 sticks celery
2/3 cup walnuts
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
2 tablespoons chopped parsley (optional)
Quinoa Waldorf Salad ingredients
Cook the raw quinoa in the water, as you would cook rice (for example, in a rice cooker or reduction method). Allow the cooked quinoa to cool.
Chop the celery, apple, walnuts, and onion.
Chop the celery and apples
Add the apple cider vinegar, lemon juice, and cooked quinoa to the chopped vegetable mixture.
Add the quinoa
Garnish with chopped parsley and serve for your next picnic or outdoor barbecue. Enjoy.
