Ingredients 2/3 cup quinoa (any colour)
1/2 cup dried apricots, diced
2 -3 tbsp Chia seeds
1/3 cup almonds, roughly chopped
3 tbsp lemon juice
2 tbsp olive oil
2 tbsp honey
¼ tsp cumin
¼ tsp salt (optional)
First rinse the quinoa thoroughly, this is important, even if the packet says it is rinsed.
Rinsed quinoa and chopped apricots
Put water over the quinoa and bring to the boil over high heat. Once it has boiled, reduce the heat, cover and simmer for 15 minutes or until most of the liquid is absorbed. Quinoa will get little white "tails" as it cooks.

While this is cooking, soak the apricots in warm water for about 15 minutes and then drain.
Meanwhile cut the almonds up into small pieces.
Almonds can be cut smaller than this
Turn off the heat on the quinoa and leave it covered for 5 minutes.
Drain the apricots, and combine the almonds, apricots and chia seeds.
Mix these gently
Add the quinoa, and mix.
Mixture now ready for dressing
For the dressing, add all the ingredients in a jar with a lid, shake until the dressing is properly combined.
Pour the dressing over the quinoa mixture and mix well.
Serve with whatever you want or eat as a meal on its own.
