Rainbow Cheesecake

This cheesecake is great enough on its own, no toppings required. It's smooth and creamy with the right amount of sweetness. The colours make it perfect for special occasions; it's almost too pretty to eat.

Preparation Time: 30 minutes
Cooking Time: 45 minutes
Makes: 8 servings

Ingredients
115g marie biscuits
50g melted butter
650g cream cheese
150g (3/4 cup) sugar
1 tsp vanilla extract
3 eggs
food coloring

Method
Preheat oven 170C.



To make the crust, put biscuits into food processor and blend into fine crumbs.



Add melted butter then pulse again until well combined.



Press the biscuit mixture into the bottom of a greased springform pan.



To make filling, add cream cheese, sugar and vanilla into a mixing bowl. Whip until smooth, around 5 minutes.



Add eggs one at a time, beating briefly between each until the mixture is smooth and well combined.



Divide the mixture into 5 small bowls. Add a few drops of food coloring to each to get the desired colors. I used red (just 1 drop to make it pink), yellow, green, blue and purple.



Pour colored mixtures into the crust, starting with the pink one right in the center. Continue pouring the other mixtures in the center. This will create the layers.
Bake for 45 minutes.



Let cool to room temperature, refrigerate overnight then cut into slices.
