Ingredients 1 onion
2 garlic cloves
1 cup of brown rice
1 purple cabbage
Half a bag of vegan mince meat
5 cherry tomatoes
1 tin of chopped tomatoes
2 thyme sprigs
1 rosemary sprig
1 Bay leaf
Fry the onions and garlic in 1tsp of olive oil for 5 minutes. Add all the seasoning and the vegan mince and stir for 10 minutes until it looks golden. Add all the tomatoes and cover for a further 10 minutes.
Wash the brown rice and add to a saucepan of boiling water. Turn to a simmer and cover for 10 minutes.
Halve the cabbage and slice into the rice. Leave to cook for a further 10 minutes.
Halve the avocado and chop into chunks.
Remove lids from both the rice and the meat and serve.
