Rainbow Coloured Vegan Dinner

Eating 'the rainbow' can be difficult when it comes to mealtimes, but I've created a colourful nutrient dense dish that satisfies vegans as well as carnivores. Here you go ...

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
1 onion
2 garlic cloves
1 avocado
1 cup of brown rice
1 purple cabbage
Half a bag of vegan mince meat
5 cherry tomatoes
1 tin of chopped tomatoes
2 thyme sprigs
1 rosemary sprig
Parsley
1 Bay leaf
Black pepper

Method
Fry the onions and garlic in 1tsp of olive oil for 5 minutes. Add all the seasoning and the vegan mince and stir for 10 minutes until it looks golden. Add all the tomatoes and cover for a further 10 minutes.



Wash the brown rice and add to a saucepan of boiling water. Turn to a simmer and cover for 10 minutes.

Halve the cabbage and slice into the rice. Leave to cook for a further 10 minutes.

Halve the avocado and chop into chunks.



Avocado,


Remove lids from both the rice and the meat and serve.

Enjoy this rainbow vegan dinner with friends and family, and they'll forget that it's meat-free.
