Rainbow Meatloaf

This colourful and delicious meal is worlds away from the boring and bland meatloaf you may have had as a child. Surprise your tastebuds with this beautifully balanced and unexpectedly tasty dinner. This recipe definitely changed my ideas of this old favourite.



Rainbow Meatloaf
This melt in your mouth meatloaf will leave you feeling satisfied.


Preparation Time: 20 minutes
Cooking Time: 45 minutes
Makes: 6-8 servings

Ingredients
Olive oil spray
2/3 cup couscous
1/3 cup water, boiling hot
800 gm lean beef mince
1 brown onion, very finely chopped
1 large carrot, grated
1 cup pumpkin, grated
2 small zucchinis, grated
1/2 cup sundried tomatoes, drained and chopped
1 egg
2 tbsp parsley, chopped
Salt and pepper, to season

The rainbow of ingredients makes for a colourful and delicious meal.


Method
Preheat your oven to 180 degrees Celsius.

Place the couscous into a bowl and pour the boiling water over the grains as evenly as you can. Cover and let stand for 5 minutes. Using a fork, stir the couscous to separate the grains.

Place the chopped onion into a microwave safe bowl and add 2 tablespoons of water. Cover and microwave on high for 2 minutes. Allow to cool.

In a large mixing bowl, combine the mince, onion, grated vegetables, sundried tomatoes, egg, parsley, couscous and seasonings. Mix well.

Place the mixture into a well-greased loaf tin and press down quite firmly. Bake it for about 45 minutes or until well browned.

Allow the meatloaf to rest for 10 minutes before turning out onto a board. Cut into slices and serve.

This delicious meal will keep the whole family happy.


Although this meatloaf is a meal in itself, it is nice served with your favourite cooked vegetables or a salad and some steamed potatoes. It refrigerates and freezes really well so you can keep some for another time and be sure to enjoy it just as much.
