Ingredients 12 Weet-Bix, crushed
1/4 cup cocoa powder
3/4 cup brown sugar
1/2 cup desiccated coconut
200 g butter, melted
1 egg, lightly beaten
3 cups icing sugar mixture
2 tbs cocoa powder
1/4 cup boiling water
rainbow choc chips or similar to decorate
Preheat oven to 180C and line a slice pan with baking paper.
In a large bowl, combine Weet-Bix, cocoa powder, brown sugar, desiccated coconut, butter and the egg.
Press mixture into your prepared slice pan and bake for 15 - 20 minutes until firm to touch. Cool completely in pan.
To make the icing, combine the icing sugar and cocoa powder in a bowl. Add the boiling water and stir to combine.
Spread the icing over the slice, you may need to use a hot knife to make it spread evenly.
Sprinkle your rainbow choc chips on top, lightly pressing them in to the icing. Set aside to cool for 2 hours.
