Raspberry and Muesli Cups

A delicious low fat dessert that doubles as breakfast Ö itís almost too good to be true. However, this yoghurt, muesli and fruit based creation ticks all those enviable boxes Ė itís refreshing and healthy and the perfect way to start or end the day.

Dessert or Breakfast? Why not indulge in these low fat and healthy Raspberry and Muesli Cups at both ends of the day.


Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
250g Frozen Raspberries
2 Teaspoons Rice Malt Syrup
1 Teaspoon Lemon Juice
500g Coconut Yoghurt
200g Muesli
Fresh Mint Leaves and Chopped Walnuts to Garnish

Method
Place the frozen raspberries, rice malt syrup and lemon juice into a small saucepan and over a medium heat bring to a boil.

Sautť the raspberries for 2-3 minutes then reduce the temperature to low and simmer until the mixture begins to thicken.

Using a stick blender puree the raspberries until smooth.

The raspberry coulis is slightly tart and can be sweetened with extra rice malt syrup. However, I find the tangy flavour complements the sweetness of the coconut yoghurt.

The raspberry coulis is slightly tart however you can sweeten to personal preference by adding additional rice malt syrup to the mixture.


Layer the raspberry coulis on the bottom of 4 serving cups. Refrigerate for 10-15 minutes.

Remove the raspberry coulis cups from the refrigerator and fill the glasses approximately half way with the Coconut Yoghurt.

Raspberry layer followed by yoghurt and muesli, then repeat the layering process with the yoghurt and muesli.


Add approximately 3 tablespoons of muesli on top of the Yoghurt.

Add another layer of the Coconut Yoghurt on top of the muesli.

Garnish with a sprinkling of muesli, chopped walnuts, fresh mint and a drizzle of the raspberry coulis.

Refrigerate until serving.

Simple and quick to make and healthy, that's why these Raspberry and Muesli Cups can be enjoyed as a breakfast meal or dessert.


Notes
In this recipe, I used Nudie's Coconut Yoghurt and Bob's Red Mill Gluten Free Muesli. Some of the larger supermarket chains such as Coles and Woolworths stock the brand otherwise you will be able to find these at any Health Shop.
