Raspberry and White Chocolate Ice Cream Cake

This is such a simple recipe to make. Prepared in less than twenty minutes. All you have to do is wait for it to set.

White Chocolate and Rasberry cake


Preparation Time: 15 minutes
Cooking Time: 4 hours set time in the fridge
Makes: 1 cake

Ingredients
600 ml thickened cream
1 can of condensed milk
2 punnets of raspberries
1 teaspoon of vanilla extract
2 tablespoons of icing sugar
1/2 cup of white chocolate melts

Utensils
1 Silicone cake pan


Method
In a mixing bowl add thickened cream and vanilla, and mix with a beater mixer on high speed until just whipped.
In a bowl add the raspberries and icing sugar and mix well to combine.
When cream is whipped fold in the condensed milk.
Fianally fold in the raspberries.
Place the silicone ring cake pan onto a baking tray and pour in the mixture.
Make sure the mixture is level then place into the freezer for five hours to set.
When cake is set turn it upside down on a plate and remove away the silicone pan slowly.

Quickly place the cake back into the fridge and prepare the chocolate to drizzle on top.
To prepare the chocolate place a saucepan on the stove with boiling water on medium heat.
Place a metal or glass bowl on top to make a double boiler.
Add the white chocolate melts to the boil and stir with a wooden spoon until chocolate has just melted.
Take off the heat and allow to cool for about thirty seconds to a minute just so it is not too hot to handle.
Grab a zip lock bag and spoon in the melted chocolate.
Seal the bag almost all the way leaving a small gap. Squeeze the bag and let out all excess air.
Seal the bag completely and twist it around.

Take a pair of scissors and cut a tiny corner off making sure not to squeeze the bag too hard as you will lose some chocolate.
Hold the bag over the cake and squeeze it as you move around the cake to drizzle it with the white chocolate.
Continue around the cake until desired amount of chocolate is on the cake.
The chocolate will set almost instantly as the cake is so cold.
Cut off desired amount of slices to serve and cover the remainder of the cake placing it quickly back into the freezer.

Notes
This recipe can be made with the whipped cream, vanilla and condensed milk, and then you can add in your own filling.
My favourites are
-Oreo biscuit sprinkles half a box instead of the raspberries.
-Peppermint Chocolate Chip made with a little peppermint essence, a drop of green food colouring and some dark chocolate chips.
