Raspberry Croissant and Custard Pudding

This was an easy to make dessert and tasted delicious. It also has little added sugar.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 6

Ingredients
4 mini croissants
150 g frozen raspberries
About 2 tbsp coconut sugar (or brown sugar)
1 tbsp sugar
2 large eggs
2 cups milk
½ tsp nutmeg

Method
Preheat the oven to 180°/160° fan forced. Grease an 18 cm by 20 cm ovenproof dish.

Cut the croissants into thick slices.

Layer the croissants, raspberries and brown sugar.

Combine the sugar, eggs and milk in a bowl. Mix until it is smooth.

Pour the custard mixture over the croissants.

Sprinkle with nutmeg.

Bake in the oven for about 25 -30 minutes or until set.

Cut.

Serve hot with shipped cream or ice cream.
