Raspberry Jam

I treaded through the raspberry jungle, picked fruit until torn to pieces, and then washed each tender berry till I had dish-pan hands - but it was all worth it when the smell of raspberry jam seeped out from the kitchen.

Growing your own fruit for jam brings a lot of satisfaction, and definitely cheaper than buying all the raspberries from the shop. If you do buy them, however, it is better value to get frozen.

Preparation Time: 40 minutes (if washing your own fruit) 10 minutes (if bought sparkly clean)
Cooking Time: 40 minutes - 1 hour
Makes: 3kg (about 8 jars)

Ingredients
1.8kg raspberries
1.8kg jam sugar


Method
Put a plate in the fridge.
Wash and hull the raspberries.

Simmer the raspberries gently for about 15 - 20 minutes, until very soft.

Pour in and stir the sugar until it has dissolved.
Put on a rapid boil until it has reached setting point.

To test wether it has reached setting point, take the plate out of the fridge and pour a sample of jam. If it wrinkles, then it is ready.

Using a funnel, pour the jam into warm jam jars and seal.
