This recipe saves the hassle of baking and is super easy to throw together. It's also a great one for the kids to get their hands dirty! (Although the caffeine will keep them up at night, so probably best not to be eaten just before bedtime.)
It's definitely a dessert for dark chocolate lovers. The cacao makes the mixture very bitter, so if you like your chocolate to be sweet, swap it for cocoa powder. Alternatively, you can add more honey or stevia (or any other sweetener you prefer) to sweeten the mixture.
Preparation Time: 5 minutes
Fridge Time: 1 hour
Makes: 16 balls
Ingredients
1 cup almond meal
1 cup cacao
1 tbsp honey
3 tsp stevia
1/2 - 1 cup water
3 tbsp peanut butter
Method
Mix the almond meal and cacao powder in a large bowl.
Add the water in small stages and stir through. Depending on how well the mixture holds together (and your own preference), you may need only half a cup or a whole cup of water.
Add the honey, stevia and peanut butter and mix until well combined.
Roll into balls, or UFOs as I seem to have done, and place on baking paper on a large plate.
Leave in the fridge for an hour, or until set.
