Ingredients 1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1 tbsp sesame seeds
5 tbsp coriander, chopped
2 garlic cloves, crushed
3 tbsp olive oil (or coconut oil)
juice of half a lemon
1 tsp dried oregano
In a food processor or blender, grind the seeds and nuts on high, into a fine flour, making sure it doesn't turn into a butter consistency.
In a separate bowl, mix through the seed/nut flour with all remaining ingredients. Squeeze some mixture in one hand - if it doesn't crumble and fall apart it has enough moisture. If not, add some water and mix through again.
Roll into falafel sized balls and either serve immediately or keep in the fridge until desired. If you aren't a huge fan of the 'raw' variety, feel free to pan fry over a low heat to brown and warm through. Delicious either way!
