Raw Pad Thai With Peanut Dressing

This is a stunning dish that works equally well as a lunchtime salad or side dish at dinner. The recipe is very flexible and you can add more or less of individual ingredients depending on your preferences.



Preparation Time: 10 minutes
Cooking Time: 0 minutes
Makes: 4 servings

Ingredients for Salad
1 large zucchini (use a special device to make into ‘zoodles’, grate or cut into matchsticks)
1 large carrot (grated or cut into matchsticks)
1 green onion, sliced finely
˝ red capsicum, sliced finely (optional)
Large handful of cashews
Handful of fresh (or frozen) peas (optional)
Large handful of fresh coriander, torn or chopped roughly
Large handful of fresh mint, chopped roughly



Ingredients for Dressing
2 tablespoons peanut butter
2 tablespoons rice wine vinegar
2 tablespoons vegetable oil
1-2 tablespoons brown sugar
1 tablespoon soy sauce
2 teaspoons fresh ginger
1 teaspoon fresh garlic

Method
For the salad, combine all ingredients in a large bowl.

Combine dressing ingredients in a small bowl and using a whisk carefully combine the ingredients.

Once the peanut butter has been dispersed through the dressing, you can alter to taste (some people might like extra vinegar, others may want extra sugar).

Pour dressing over salad just prior to serving.
