Red Chicken Curry with Pineapple

A yummy creamy curry with a sweet twist that will make you go back for seconds

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 6 servings


Ingredients
500 grams boneless chicken thigh, cubed
2 small brown onions, quartered
3 small carrots, sliced long ways
2/3 cup canned crushed or sliced pineapple
2 tomatoes, diced
1 cup beans, topped and tailed
1 clove garlic, crushed
1 tbsp sunflower oil, other oils can be used
4 tbsp red curry paste
400 ml coconut cream
1 tsp raw sugar
2 tbsp cornflour
Rice to serve

Method
Heat the oil in a wok.
Fry chicken and garlic until golden brown

Add onion and carrot and fry for 3 minutes

Turn down the heat and add the curry paste, fry until fragrant

Add the coconut cream and stir until combined

Add the beans, tomatoes and pineapple
Cover and simmer for 15 minutes
While simmering, add the sugar.
Mix the cornflour with a small amount of water and add to the wok, mix as until it thickens

Serve on a bed of rice
