This is a variation to a Nicoise salad which is easy to make and healthy.
Nicoise Salad originated in France, and it is sometimes made with potatoes as well as anchovies.
In this recipe I have added a nutty flavour by using
red rice
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 2 - 3 servings as a main
Ingredients
¼ cup red rice, rinsed
125g green beans, trimmed
1 can 180g tuna, drained
2 spring onions, thinly sliced
125g small roma tomatoes
¾ Lebanese cucumber, chopped
¼ cup kalamata olives
Handful of chopped parsley to taste
2 boiled eggs
FOR THE DRESSING
Less than ¼ cup olive oil
1 tbsp red wine vinegar
1 tbsp capers
½ tsp sugar
Bit of garlic
Method
Cook the red rice following packet instruction. I used the absorption method.
Cook the beans in a bit of salted water for only 1 - 2 minutes, they should still be crisp.
Dry them with paper towel.
In a large bowl, put the tomatoes, cucumbers and sliced spring onions and mix slightly.
Then add the beans, parsley and olives.
Mix it thoroughly, add the flaked, drained tuna and mix again.
For the dressing, put all ingredients into a jar, add salt & pepper, and shake. Pour over the salad just before serving.
I added a few pretzels to make the dish look nicer as well as parsley on the side.
Lastly cut the eggs in quarter and put on top of each plate.
