Red Tomato Chutney

My grandpa has a greenhouse full of tomato plants, and we are being sent red ripe tomatoes by the bucket load. So today my mum sent me off to the supermarket to get a load of spices and vinegar and she made us all a lovely chutney. Based on the brands I used, each 30g serving is about 48 calories.

Preparation Time: 30 minutes
Cooking Time: 2hrs 15 minutes
Makes: 1kg

Ingredients
1.8kg red tomatoes
2 tbsp mustard seeds
3/4 tbsp ground allspice
1 tsp cayenne pepper
225g granulated sugar
4 tsp salt
400ml white vinegar

Method



Bathe the tomatoes in boiling water for a couple of minutes, then drain them and dunk them in cold water.



Peel the skins off the tomatoes.

Put the tomatoes in a large saucepan and mix in the mustard seeds, cayenne pepper, and allspice.

Simmer the tomatoes for about forty-five minutes until it becomes pulpy.



Stir in the sugar, salt, and vinegar, then continue to simmer for about an hour and half, until the chutney has reduced.



Using a jam funnel decant the chutney into jars, and seal.

Might be a standard piece of equipment, but I've neither known anyone who's used one before and nor have I known to use one. Must make life alot easier though, when you make jam. My youngest daughter and I, have only made jam a few times and we used wide mouth jars, so it was easy to jar it with a spoon. We also tried to grow a few tomatoes, but what with bugs and things, it just got too hard. Last time tomatoes and passionfruit were cheap enough, we made tomato, passionfruit and chilli jam; then my daughter got keen, and went on to make plum jam on her own. A jar of the TPC jam we gave away, had mustard added to it and was used as a sausage relish. The plum jam was used for a duck dish as well as jam. Have never actually made chutney, so I think I'll give it a try. c&c

This sounds good and not too difficult either. Love the jam funnel - I've never seen one before; it certainly must make life easier when it comes to getting your produce into jars!
Aren't you lucky with all those gorgeous tomatoes!!? Not to mention the chutney. . . Ummm with roast beef or on a cheese toasty. Unbeatable fir Saturday lunch. c&c
With the price of tomatoes at the supermarket to how much it cost for the seeds/plants and soil, we must have had the most expensive tomatoes around. Makes good chutney though. I'm surprised you've never come across a jam funnel before. I thought it was a standard piece of equipment.
