Retro Cornflake Cookies

These nostalgic cookies are perfect with a cup of tea.
Kids will go absolutely wild for them.

Preparation Time: 10 minutes
Cooking Time: 10-12 minutes
Makes: 12 large/24 small cookies

Ingredients

220g butter
cup caster sugar
1 egg
2 cups of plain flour
1 teaspoon baking powder
2 cups of crunchy nut cornflakes


Method
Preheat oven to 180 degrees (fan forced)
Cream butter and sugar until light and fluffy

Add egg & beat well
Sift the flour, baking powder and fold into mixture.

(Mixture will be appear quite dry but will compress nicely into balls) I use an icecream scoop to get even portions.

Roll balls into cornflakes, cover well.
Flatten onto tray



on tray

Bake for 10-12 until a lovely golden brown
Let them cool on tray before transferring onto cooling rack.

My Mum made these Cornflake cookies for us as kids. They are delish when cooked but I also loved just eating the batter - yum!
