Rhubarb Compote

Rhubarb is often overlooked when it comes to both healthful and unique foods.

Loaded with vitamin C and marked by a tart taste and alluring aroma, get creative with this rhubarb compote that can be served warm or cooled for anything from breakfast to dessert!



Preparation Time: 2 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
4 stalks rhubarb, diced
1 tsp vanilla essence
1/2 tsp ground cinnamon
1 tsp brown sugar (if desired)

Method
In a small saucepan, combine the rhubarb and vanilla essence over a low heat. Bring to a simmer, and cook for 5 minutes, or until the rhubarb has broken down.

Remove from heat and stir through the cinnamon.
Serve warm or cooled with cooked porridge for a snazzy breakfast, or over ice cream for an evening treat.
