These biscuits are such a doddle to make, and taste delicious. The require very little preparation and are cooked in no time, meaning your impatient tasting committee don't have to wait long. Based on the ingredients I used, each biscuit should be about 61 calories.

Ingredients
200g wholemeal flour
100g ground rice
150g Xylitol sweetener (or ordinary sugar if you prefer)
150g margarine
1/4 tsp lemon juice
4 tbsp water
11 glace cherries
Method
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Rub the butter into the flour, ground rice, and sugar.
Add the water and lemon juice to form a dough.
Divide into 32 flattish rounds and place on a baking tray.
Chop the cherries into thirds, and put them on top of the biscuits to finish. (Don't let the biscuits cool first, otherwise the cherries wont stick).
