Rice Noodle and Peanut Salad

A light and healthy recipe that is quick and easy to make. Satisfying for the tummy and the waist-line.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 6 servings

200g rice noodles (recommend Chang's variety)
75g raw unsalted peanuts
150g long beans
1/2 cucumber, thinly chopped
6 spring onions, chopped finely
12 Thai basil leaves, torn
bunch of mint, chopped roughly
bunch of coriander, chopped roughly

zest and juice of 1 lime
1 small red chilli, finely chopped
2 tablespoons rice vinegar
1 teaspoon minced garlic
1 teaspoon soft brown sugar
1 teaspoon sesame oil
1/2 teaspoon soy sauce

Roast peanuts in the oven for about 10 minutes or until golden brown, at 180 degrees. Set aside to cool and then break up with rolling pin.

Cook the rice noodles according to the instructions on the packet then drain and leave to cool.

Whisk all the dressing ingredients together in a large bowl and add the noodles.

Cook the beans in 2 tablespoons of water in the microwave for about 3 minutes or until just soft. Drain well.

Toss the peanuts, cucumber, spring onions, beans and herbs through the noodle and dressing mixture until mixed well.

Serve with extra soy sauce and sweet chilli sauce if needed. Carnivores may be tempted to add some poached chicken or meat on the side.
