Rich Glazed Meatloaf

By pimping your beef mince with a lovely selection of condiments and vegetables and finishing it with a rich glaze, you will have a sumptuous meatloaf!

Serve with salad in the warmer months, mash and steamed greens during winter and for a quick delicious filler - crusty bread, lettuce and relish.

Preparation Time: 20 minutes
Cooking Time: 55 minutes
Makes: 12 servings

800g beef mince
1 medium brown onion, grated
2 cloves garlic, crushed
4 rashers of bacon, finely diced
2 eggs
1/2 cup fresh breadcrumbs
3/4 cup bbq sauce
2 tablespns tomato paste
1 tablespn dijon mustard
2 tablespns chopped parsley
1 tablespn brown sugar

Preheat the oven to 180 degrees C. Spray a loaf tin with oil. Cover a baking dish with foil.
Combine mince, onion, garlic, bacon, eggs, breadcrumbs, 1/2 cup BBQ sauce, mustard and parsley in a bowl. Mix thoroughly.
Press this mix into the loaf tin.

Invert the loaf tin onto the foil covered tray.

Bake for 15 minutes.
Make glaze by mixing the remaining 1/4 cup of BBQ sauce with the brown sugar.

Remove meatloaf from the oven and take off the loaf tin. Brush the meatloaf with the glaze generously.

Return the meatloaf to the oven and bake for a further 40 minutes.
Leave to cool for at least 30 minutes before slicing and serving.
