Ricotta & Banana Hotcakes

There’s a million ways to eat ricotta, but there’s only one way to wake up with it - and that’s by mashing it up into hotcakes! These bad boys aren’t as unhealthy as people may think. Simply replace all the sugar with some super foods such as molasses, chia seeds, and banana! The mixture looks so smooth and fluffy, you’ll just want to eat it raw. I absolutely love cheese, although I try not to eat that much of it. So when I use it in my cooking, I make sure I do it well (sorry to my vegan readers, I don’t mean to disappoint!). Enjoy these hotcakes as a nice and lazy brunch treat!

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 3-4 servings


200 grams of ricotta cheese

2 bananas

1 cup of milk (I like to use soy milk)

1-2 eggs

100 grams plain flour

2-3 tablespoons of chia seeds

1 tablespoon of molasses

2 teaspoons of ground cinnamon


Mash up the bananas

Place the ricotta, banana, milk, egg yolks, flour, chia seeds, cinnamon, and molasses into a bowl and whisk it all up by hand, until the mixture is smooth

Spray canola oil in a large frying pan and drop in heaped spoonfuls of the mixture on medium-high heat

Cook the hotcakes for about 2 minutes on each side until golden

Serve the hotcakes onto a plate and drizzle a small amount of molasses over the top (it looks just like chocolate, except healthier!) - you can also cut up some more banana to go with it
