Ricotta Berry Cheesecake

A delicious way to include all your favourite berries in a cheesecake. I used blueberries and strawberries in this recipe but you can always substitute with your favourites. Use one, two or use them all.

Preparation Time: 10 minutes
Cooking Time: 40 minutes, 30 minutes resting
Makes: 4-6 servings

250g ricotta cheese
100g cream cheese
1/3 cup caster sugar
2 eggs
1 tbsp grated lemon rind
2 tbsp plain flour
30g blueberries
125g strawberries, sliced and hulled
Icing sugar to dust

Preheat oven to 180C, grease a 18cm cake tin.

In a large bowl beat together ricotta, cream cheese and sugar until smooth.

Add in the eggs and beat well after each addition.

Stir in the lemon rind and sift in the flour.

Pour one third of the mixture into the prepared tin.

Top with strawberries and blueberries.

Pour another third of the mixture over the berries.

Repeat, top with strawberries and blueberries and pour the last third of the mixture over.

Bake for 40 minutes or until golden and firm to the touch.

Remove from the oven and chill for 30 minutes to set.

Serve dusted with icing sugar.
