Ricotta Fingers

Ricotta Fingers


These simple and delicious treats are perfect finger foods for a party or even a lunchtime or afternoon tea snack. For a slightly Middle Eastern influence, I've added parsley and mint to complement the ricotta. Serve them hot with a Spicy Mango Chutney (see my Recipe Yum article for details).

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 2 - 4 servings

Ingredients
1 cup fresh ricotta
1/2 cup grated parmesan cheese
1 tablespoon melted butter
1 tablespoon finely chopped parsley (optional)
1 tablespoon finely chopped mint (optional)
1 egg yolk
2-4 sheets fillo pastry
2 teaspoons sesame seeds (optional)

Method
Combine your fresh ricotta with the grated parmesan cheese, finely chopped parsley, mint and egg yolks. Mix together thoroughly.
Lay out one sheet of fillo pastry and brush with the melted butter.
Lay another sheet of fillo pastry on top on the first layer and brush this layer with melted butter as well.

Spoon the mixture onto the fillo


Spoon the ricotta mixture along one side of the prepared fillo pastry.
Roll the pastry tightly into a "finger" shape.
Brush with melted butter and sprinkle with sesame seeds (this is an optional decoration only).
Place the prepared ricotta fingers on a lined baking tray.

Place them on a baking tray


Bake in a moderate oven for approximately 20 minutes or until the ricotta fingers are nicely browned.
Serve hot with Mango Chutney (see my Recipe Yum article for details).
