Risoni & Basil Pesto

Here is another crowd pleasing yet super easy dish. I promise it won't take you more than 20 mins to get this on the table.

Risoni is typically a 'soup pasta' made of semolina, but makes for a different pasta hit.



This basil pesto is a family favourite which will inevitably have you turning up your nose to any jarred product ever again.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
2 cups risoni (dry)

Pesto
1 cup fresh basil leaves, roughly torn
1/4 cup pine nuts
1/4 cup olive oil
60g parmasan cheese, grated
2 cloves garlic, minced

bunch rocket leaves, for serving

Method
Bring a large pot of water to the boil and add the dry risoni. Cook for about 8-10 mins or until al dente.



Meanwhile, place all pesto ingredients in a food processor, and blend until the consistency of a chunky mayonnaise.



Add 2 tbsp of the risoni cooking water to the food processor and process once more. Remove and set aside.

Drain the risoni and divide between bowls. Top immediately with the basil pesto and top with a handful of rocket leaves. Prepare to devour.
