Roast Sumac Bread & Tomato Salad

This is a really fun salad - something between a deconstructed pizza and a flamboyant Italian creation.

Sumac isn't a spice we work with a lot in everyday Western dishes, it is surprising how flavoursome it is, and how well it pairs with the lemon and fresh herbs.

Perfect for summer!



Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
2 lemons, thinly sliced segments
4 pieces bread, torn
4 tbsp extra virgin olive oil
1 tbsp sumac
3 tbsp pine nuts
6 tomatoes, sliced
1 cup mint leaves, torn
1 cup basil leaves, torn

Method
Preheat oven to 200C.
Place the lemons with 1 tbsp water in a dish and microwave on high for 2 minutes. Drain and set aside.
Line a baking tray and spread the bread, oil, sumac, pine nuts and lemons evenly across. Roast in oven for 20 minutes or until browned.

Remove lemons.
Mix the tomatoes, mint and basil through, and serve either warm or cooled.
