Roasted Beetroot Dip

Nothing beats the taste and smell of roasted beetroot ... the results are worth the extra effort as you will get an intensely sweet caramel, smoky and nutty flavour, which you wouldn’t get using tinned beetroot. In this version, I have used fresh lime juice as it ever so lightly cuts through a little of the sweetness to provide a subtle tangy flavour.

Roasted Beetroot Dip can be served with a medley of other dips, such as Artichoke and Bean and Cauliflower


Preparation Time: 60 minutes
Cooking Time: 10 minutes
Makes: 2-4 servings

Ingredients
5 Small Beetroots
2-4 teaspoons of Virgin Olive Oil
200g fetta cheese
200g walnuts
1 Lime
salt and pepper to taste

Method
Pre-heat oven to 180 degrees.

Remove the leaves and trim the roots from the beetroot. Place onto a baking tray and drizzle with oil.

Drizzle oil over beetroots then place into a pre-warmed oven to bake for approximately 60-minutes


Roast the beetroot for approximately 60-minutes. Using a fork, spike one of the beetroots. The fork should go easily through the beetroot.

Remove the beetroots from the oven and allow to cool.

Peel the beetroots (skin should come off quite easily). Footnote: when preparing beetroots I used disposable gloves to avoid ending up with stained beetroot hands.

Peel skins off beetroot


Cut beetroot into small cubes

Dry roast the walnuts in a skillet for approximately 5-10

Pan fry walnuts


Into a blender add the walnuts, fetta cheese, beetroot, lime juice and olive oil and pulse until smooth.

Process all ingredients until smooth


Serve chilled with grissini sticks or warm crusty bread

Can also be used as a spread on toast (spread avocado on toast and top with beetroot – it’s simply devine)

OMG - this looks delicious Annanlisa! Have just bought a blender so experimenting on dips - this one's next :)
