This deliciously sticky, surprisingly sweet and versatile side dish has become one of the family favourites. Capsicums provide a substantial serving of vitamin C and antioxidants, so they are a worthwhile addition to any meal.

Makes: 4 side servings
Ingredients 5 capsicums, any colour (I prefer red)
olive oil, to drizzle
Preheat the oven to 180C.
Wash the capsicums thoroughly, and chop in half. Deseed and place on a baking tray.
Drizzle with oil and place in the oven. Cook until the skins start to blacken and bubble, and then remove from the heat.
Place in a bowl covered in glad-wrap and allow to cool. Once able to be handled, peel off the skins and serve either as a side dish to a piece of cooked meat, mixed through pasta or salad, or added to a Mediterranean inspired sandwich - be creative!
