Roasted Carrot Soup

This soup is amazing. It tastes fantastic, only has a few ingredients and it'll leave your family wanting more.

Preparation Time: 10 minutes
Cooking Time: 50 minutes
Serves: 4

Ingredients
1 kg carrots
1 onion
1 litre vegetable or chicken stock
2 cups water
1/2 tsp garlic powder
salt and pepper
1 tbs olive oil

Method
Preheat oven to 200C and line a baking tray with baking paper.
Peel the carrots and onion and chop into large chunks. Place them onto the baking tray and drizzle with oil. Season with salt and pepper.
Roast for 35 minutes or until carrot is tender, turning once during cooking.

Place stock and water into a large pot over high heat. Add the carrots, onion and garlic powder. Cover and bring to the boil then reduce heat and simmer for 5 minutes.

Blend the mixture until smooth and then return to the heat. Simmer covered for 10 minutes.
Serve with fresh bread.
