Roasted Polish Sausage With Veggies

A nutritious recipe for meat and potato lovers that is easy to just throw in the oven and forget!


Roasted Kielbasa With Veggies


Preparation Time: 30 minutes
Cooking Time: 45 minutes
Makes: 4 servings

Ingredients
Vegetable oil spray.
1 kg Russet potatoes cut into chunks.
1 tbsp Extra-virgin olive oil.
1 tbsp Italian seasoning.
1 Large onion, peeled and chopped.
4 Carrots thinly sliced.
397 g Polish sausage, cut into coin-size pieces.

Method
Preheat oven to 350 degrees F.
Coat a large oven-safe casserole with vegetable oil spray.
Place potatoes in casserole.
Drizzle with oil and sprinkle with Italian seasoning. Toss to coat.
Add onion, carrots and Polish sausage. Toss again.
Cover tightly and place in oven. Bake for 45 minutes or until potatoes and carrots are fork-tender.
