Roasted Stuffed Pears with Ricotta Cream

This decadent tasting but very low-fat and healthy dessert will surprise everyone who tucks into this winter warming dish. I havenít always been fond of pears but roasting brings out a crispy and caramelised taste and texture to the pear. When combined with prunes, pine nuts and honey, the rich vibrant flavours seep into the pearís flesh creating absolute culinary bliss. Top with a little Ricotta Cream and you know youíve made it to heaven.

Roasted Stuffed Pears served with Ricotta Cream.


Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 2 servings

Ingredients
1 Pear
100g Pitted Prunes
4 Tablespoons Pine Nuts
4 Tablespoons Honey
100g Ricotta Cream

Method
Cut the pear in half and scoop out the core and seeds and a little of the flesh.

Dice the pitted prunes and in a small bowl combine the prunes, pine nuts and honey.

Combine the chopped pitted prunes, pine nuts and honey to make the stuffing.


Stuff the pears with the prune mixture.

Pre-heat the oven to 180 degrees and roast pears for 30-minutes.

Remove pears from the oven and place on individual serving plates.

Garnish with a sprinkle of coconut and ricotta cream or as an alternative, natural Greek yoghurt.
