Ingredients For the salmon 210 g can salmon - I used both red and pink
3 large hard boiled eggs, chopped
¼ cup onion, chopped
½ cup cucumber, seeded and chopped
1 tsp Dijon mustard
¼ cup mayonnaise, or a bit more, to taste
½ tsp dried tarragon
Bit of paprika
For the rocket Almost 1 bunch baby rocket, large stems removed
¾ firm pear, cut into quarters, and sliced thiny
50 to 75 g Parmesan, shaved
20 g walnuts
About 2 tbsp any dressing of your choice
Method For the salmon
Put all the ingredients in a bowl, and mix well.
Add some salt and pepper, to taste.
Chill, if you have time, for a while before serving with the rocket or any other salad or vegetable.
For the rocket
Put all the dry ingredients into a mixing bowl.
Add the dressing, and toss to mix.
Season well with salt and pepper to taste, and serve with the salmon salad, or any other meal.
