Salmon Lunch

Salmon, avocado, radish, tomatoes and hummus - the easiest, and tastiest 'carb free' healthy lunch.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 1 servings

Ingredients
A salmon fillet
3 cherry tomatoes
Half an avocado
3 radishes
2 tblsp hummus

Method
Get a sheet of foil and pop in a tray. Add the salmon, and season with black pepper, 1 crushed garlic clove, and parsley. Pop in the oven on the middle shelf for 20 minutes at 180 degrees (gas mark 4)
While it's cooking chop your radish and tomatoes, and avocado and set aside
After 20 minutes remove the salmon and put in the middle of the plate. Season the vegetables with cracked black pepper and arrange nicely around the salmon.
Add a dollop of hummus and enjoy!
