Salmon Patties

When I was a child, I had a very long list of foods that I refused to eat, and salmon was a part of it. So for years I ate "Potato Cakes", never realising the sneaky deception that was lying on my plate.
These Salmon Patties are easy to make and delicious to eat! The mild salmon taste can be enjoyed even by those who don't like seafood.



Preparation Time: 30 minutes
Cooking Time: 10 minutes
Makes: approx. 12 patties

Ingredients
2 large potatoes, peeled
1 small onion, finely diced
Approximately 300g tinned salmon, drained and deboned
1 tsp garlic powder
Salt and pepper, to taste
cup breadcrumbs

Method
Roughly chop the potatoes. Boil until just tender and mash. Add a splash of milk if needed to get a smooth consistency.



Stir onion through the mashed potatoes. Set aside to cool.



Place salmon in a bowl and season to taste.



Add mashed potatoes and mix until combined. Stir in extra seasoning if desired.



Using your hands, shape the mixture into palm-sized patties and thoroughly coat with breadcrumbs.



Heat a large frypan to a moderate temperature with a small amount of oil. Cook the patties for 5 minutes on each side or until lightly browned.



Serve with salad or vegetables.

Patties can be made ahead of time. Simply place the breadcrumbed patties in the refrigerator until needed.
